Fast and Frugal Recipe: Mediterranean Pizza Toast
This is a really handy and yummy recipe we have been using a lot lately. It’s great as a snack or as a meal, and something the whole family is sure to love. The recipe is flexible, just as it is whenever making your only pizza. The cost of each slice probably comes to about 25 cents (depending on your toppings). Preparation time is about 5 minutes and baking time about 10 minutes.
This is a great recipe to have kids make on their own. Each member of the family can prepare his/her pizza toast as desired.
Following are 3 versions of our Mediterraean Pizza Toast recipe. As the Mediterranean flavor may not be palatable to some younger children, check out the alternative topping suggestions and combinations farther down.
Mediterranean Pizza Toast

Ingredients
- Wheat bread
- Olive Oil
- Mozzarella Cheese
- Feta Cheese
- Diced Roma Tomatoes
- Spinach
- Basil
- Garlic (fresh or powder)
Preparation Instructions
- Preheat oven or toaster oven to 375° F
- Spread a teaspoon of olive oil on a slice of bread
- Sprinkle 2 teaspoons mozzarella cheese over the surface
- Spread minced garlic or sprinkle garlic powder over mozzarella
- Spread out diced tomatoes and spinach
- Crumble feta cheese over top
- Sprinkle basil on top
- Toast in oven or toaster oven for about 10 minutes (or until cheese is brown)
Mushroom and Tomato Pizza Toast

Ingredients
- Wheat Bread
- Olive Oil
- Mozzarella Cheese
- Sliced Mushrooms
- Diced Roma Tomatoes
- Salt
- Basil
- Optional: Parmesan Cheese
Preparation Instructions
- Preheat oven or toaster oven to 375° F
- Spread a teaspoon of olive oil on a slice of bread
- Sprinkle 3 teaspoons mozzarella cheese over the surface
- Sprinkle basil on cheese
- Layer thinly sliced mushrooms over cheese
- Place diced tomato over mushrooms
- Sprinkle 1 or 2 teaspoons of mozzarella cheese over toppings
- Optional: Sprinkle Parmesan cheese over toppings
- Toast in oven or toaster oven for about 10 minutes (or until cheese is brown)
Garlic and Cheese Pizza Toast

Ingredients
- Wheat Bread
- Olive Oil
- Mozzarella Cheese
- Feta Cheese (Crumbled)
- Basil
- Rosemary
- Fresh Minced Garlic
- Optional: Parmesan Cheese
Preparation Instructions
- Preheat oven or toaster oven to 375° F
- Spread a teaspoon of olive oil on a slice of bread
- Sprinkle 2 teaspoons mozzarella cheese over the surface
- Crumble feta cheese over mozzarella
- Spread minced garlic over the cheese
- Sprinkle basil and rosemary over garlic and cheese
- Optional: Sprinkle Parmesan cheese over toppings
- Toast in oven or toaster oven for about 10 minutes (or until cheese is brown)
Alternative Ingredients
As mentioned above, pizza toast can be made any way you like. Here are a few other ways and topping combinations:
- Pasta, Pizza, Alfredo or Tomato Aauce instead of Olive Oil
- Shredded Cheddar Cheese in place of Feta
- Topping Combination: Olives, Mushrooms, Pepperoni and Sausage
- Topping Combination: Bell Peppers, Onions and Mushrooms
- Topping Combination: Ham/Canadian Bacon, Pineapple and Mandarin Oranges
- Topping Combination: Pepperoni, Mushrooms and Onion
- Topping Combination: Plain Cheese with Basil and Oregano

We like to make pizza with either Pita or Flat Bread. I get the bread from the day old cart at the grocery store for around a dollar a package and then take them home to freeze. Open a jar of your favorite pasta sauce then add 1-2 Tbsp (your taste), Itallian seasoning (or other dry herbs) to the jar and stir.
To assemble merely pull out however many pieces of Pita/Flat bread you need and brush with extra virgin olive oil (make sure you brush the edges so they don’t get too hard). Scoop a big dollop of sauce in the middle of the bread and, using the back of the spoon, spread using a circular motion. Then top with thinly sliced veggies and/or already cooked meat. Top with favorite cheese and pop in the oven at 350°F about 5 minutes (or until you can just begin to smell it cooking).
What we like about the recipe is that every one gets to make a customized dish, there is no waste (unused bread remains in freezer and leftover sauce can be used with pasta later in week), and it’s quick — you don’t even thaw the bread before brushing with olive oil.

What a fun idea. I didn’t know what I was going to feed my kids for lunch today and this is a wonderful idea. My kids love pizza and I hope they will give the toast idea a try. I might have to cut it in the shape of a triangle to fool my picky son.
