What a fun idea. I didn't know what I was going to feed my kids for lunch today and this is a wonderful idea. My kids love pizza and I hope they will give the toast idea a try. I might have to cut it in the shape of a triangle to fool my picky son.

Thanks for the tip. I stumbled.

We like to make pizza with either Pita or Flat Bread. I get the bread from the day old cart at the grocery store for around a dollar a package and then take them home to freeze. Open a jar of your favorite pasta sauce then add 1-2 Tbsp (your taste), Itallian seasoning (or other dry herbs) to the jar and stir.

To assemble merely pull out however many pieces of Pita/Flat bread you need and brush with extra virgin olive oil (make sure you brush the edges so they don't get too hard). Scoop a big dollop of sauce in the middle of the bread and, using the back of the spoon, spread using a circular motion. Then top with thinly sliced veggies and/or already cooked meat. Top with favorite cheese and pop in the oven at 350°F about 5 minutes (or until you can just begin to smell it cooking).

What we like about the recipe is that every one gets to make a customized dish, there is no waste (unused bread remains in freezer and leftover sauce can be used with pasta later in week), and it's quick -- you don't even thaw the bread before brushing with olive oil.
